Carnitas are one of my favorite Mexican foods!
This recipe sounds fabulous, but I would use fresh garlic, plus the powder, and increase the amount of all the spices.

I am not a big eater of chowders, but this one sounds good, especially with the bacon. I would never use creamed corn though, I hate the stuff. I would use frozen or fresh.

This sounds really good, as long as you don't ruin it by adding any kidneys. I would add a can of mushrooms, since we love them and would probably simmer the beef longer to ensure it gets tender.

This recipe sounds like an awful lot of work! If I ever made something like this, I would omit the tomato paste and add some sage and even sausage.
The pumpkin seed sauce does sound good for serving. . . .
