Bistec en Cazuela - Skirt steak, cut thinly; Lime or sour orange, juiced; Flour for dredging; Salt, pepper & cumin to taste; Olive oil; Onion, garlic and Green pepper, sliced; Bay leaf; Dry white wine; My homemade roasted tomato sauce - Place steaks in a shallow bowl or glass pie plate and squeeze the lime or sour orange juice over it. Cover and let marinate in refrigerator for about half and hour. Dredge the meat in the seasoned flour and saute until browned. Set aside. Add the onion, garlic, green pepper and bay leaf to the pan drippings. Add a bit more olive oil if needed. Saute until onion i s partially limp. Add the dry wine to deglaze pan. Add meat back in and the tomato sauce. cover and cook for 10 minutes. Served with brown rice and a salad made with sliced beets, shredded carrots and caramelized pecans.
