Heh, of course I'll tell. It's fillet mignon. However, before we get to thinking it's all pricey and such, we bought it at Costco as a whole filet (quite cost effective) and cut what we needed ourselves. Then we filleted the tenderloin into parcels, divided those and froze them for new years eve!

Years ago when I worked in a gourmet food shop, I was able to buy the filet mignon trimmings (the parts too small to sell as a filet) at a greatly reduced price. It made killer stroganoff.

Cristina, see my comment above. It's filet mignon which lends itself ideally to a flash in a wok and gives off an irresistable flavor to the sauce. You really don't need much so it's surprisingly cost effective for a marvelous dish full of deep flavor.
If you can't make it tender you're doing something wrong. :) It looks great.

Exactly, Nippy! Many times it's the wrong beef in the recipe too and it toughens like shoe leather. It pays to use the right meat with the right recipe.
