By tradition, white peppercorns are usually used in Genoa salami, with black peppercorns studding cotto salami.

The peppercorns create explosions of spice in the finished product, making Genoa salami or cotto salami, a rather zesty food to eat.

Most salami are made of pork, but I prefer all-beef kosher salami (when it's available).

I've had the pleasure of touring the Oscar Mayer "kill" floor. Saw the pig carcases being processed. (Almost got knocked to the floor by a 'reject' zipping down my way just because I didn't hear the warning bell - another story).

If people really knew how a pig is processed to yield various pork products, they'd turn into vegetarians immediately. Oscar Mayer uses every part of the pig except its squeal.

As un-Kosher as can be, I prefer the prosciutto crudo. Horrific as it may be, it is tender, salty, and goes perfectly with wedges of melon and other goodies like goat cheese filled figs. I cannot resist.
