Black-eyed peas for New Year's Day - a la Tonia. Since living with Debbie I have been required to adopt the Southern tradition of black-eyed peas on New Years Day. The first couple of years it was just a can of beans warmed up and served as a side dish. I have been trying to get a little fancier with it and so this year cooked the beans, kielbasa (in place of ham hocks), scallions (to replace collard greens) and Rotel (my favorite canned product - diced tomatoes and green chilies) in a gravy that was made from the juices of the chicken I roasted last night. Served it over cubed home made cornbread and there you go - a Southern tradition adapted. Sending out wishes for peace, joy and prosperity to all.
