Thanks all. I'm still not happy with the way whipped cream looks -- it's really hard to capture it's nuances.

Kevin - I need to figure some ways to modify your recipes into more healthy ones. I cannot eat sugar, need to go to high fiber and low fat.

But I still want this.

It's healthy -- it just has sugar in it and some fat. Still far better than anythin you could buy in a store.
