that's so cool you want to can. I canned for my first time last year. I made gooseberry jam from wild gooseberry bushes. It was a little intimidating because I was all by myself, but I am so glad I tried and did it. I used the water bath method and a recipe from a friend of a friend. as long as the lid pops, you've got a good seal and you shouldn't worry. give yourself enough time and have everything prepared that you can and in good to reach places (so you don't drop glass jars when they're hot) a jar lifter is key for the water bath method- a good sturdy one. once you do the first batch, you'll be more confident and won't have to think much after that one. you can do it! you'll be so proud of yourself!

it's relieving to hear about other people thinking about homesteading. right on! my husband bought land off-the-grid 8 years ago and I married him 4 years ago and jumped into it when he had only a 10ft by 10ft house. we have now built an 8-sided house for me, a bathroom, put in a septic tank, got a well, and we're working on many other things.

It is very empowering to own everything you have and not pay bills for energy. we are i'd say 95% running off of solar energy. it is very possible to do as long as a person doesn't expect to use energy like they used to do. everything is calculated and not taken for granted. we are hoping to build a green house next year so we only eat our own veggies. i even picked wild/natural gooseberries and made jam and juice last fall

i hope you go and do it. it is hard work but extremely rewarding, especially in this day and age with the economy as it is. you can do, people have done it forever (except the past 100 years)!!!

living off of the grid is so empowering. It makes a person feel so good in side, that all of the sacrifices are worth them. People don't need all of the things that on-the-grid offers. How did people live just 80 years ago? I live off-the-grid and have solar panels. They are expensive but we buy them as we can afford them and chose not to use credit cards for anything unless we can pay if off the next bill. We dry our clothing outside on lines in the summer, and on racks near the woodstove in the winter. We garden to save money. All groceries cause the use of gas to ship them, stock them, package them... We grow what we can. We barely use lights. We don't watch t.v. We go outside for entertainment. Right-on!!!!
