Dan,

In well-aged cheeses, (etc, well-aged cheddar cheese) lactose is almost completely broken down by bacteria that aren't harmful, but eat lactose. I think you'll be fine if you avoid processed cheese product (i.e. Kraft) and stick to real cheese instead!

I should try cooking with a crock pot some time. Sounds convenient. I usually cook Asian-style soups (daikon-chicken, hot-and-sour, etc), but I've never used a crock pot to do it.

As for what they are thinking - it's hard to say.. sometimes, the raw materials they buy to make the chicken is the source of the contamination. I think it's very important that they do routine testing on their raw ingredients for wheat allergens since they can't control what happens at their suppliers.
