I wish attitude towards alcohol was more open in the U.S. and I wish I had grown in a family that valued wine as a family drink. Hey, but it is never too late to learn, right? I love Spanish wine. I don't think I had any that I didn't like so far.

Queso doble crema is a very creamy, crumbly cheese and not as salty as feta. It's very rare here in the States but hopefully I will find it again and write about it with places where it can be found.

They were so soft and buttery that you would think butter was used, even though it wasn't, and the taste? If you like avocado you will love these ones, if you don't like avocado, only the color would give it away because the flavor was so subtle. Don't be afraid to try new things, that is my motto. :)

Hi Dorine,

I roast the pumpkin seeds in the shell first and then process them in the blender or food processor until I get a fine powder. I then mix it with the rest of the ingredients and cook. For this recipe I used 2 cups of seeds. I hope that helps.
