Hi Lisa,

I went vegan for ethical reasons—cows, pigs, chickens, fish, and other animals have feelings, just like dogs and cats do! (FishingHurts.com has details about the cruel things that happen to both wild-caught fish and fish on aquafarms. It’s very disturbing, but I think anyone who chooses to eat fish should know what they’re supporting.) The health benefits and the environmentally-friendly aspects of a vegetarian diet are just a major bonus for me.

I don’t think it’s healthy to eat the flesh (or secretions) of any animal. Fish’s bodies absorb the toxic chemicals in the water around them, and from other fish they’ve eaten. Contaminants in fish flesh, including PCBs, mercury, cadmium, lead, chromium, dioxins, and arsenic, can cause serious health problems, and, like beef, pork, and poultry, fish flesh contains cholesterol and saturated fat. You can get omega-3 fatty acids and other nutrients from flaxseeds, walnuts, soy, vegetables, fruits, and other vegetarian foods.

Who wrote anything about chicken livers? Foie gras is made by force feeding ducks or geese until their livers expand as much as 10 times their normal size. But why not be kind to all birds? We don't need to eat anyone's liver.

Hi, Carol. It's really unrealistic to think that people would all go vegetarian overnight, so pigs currently on factory farms would certainly not be turned loose. That would be insane. But as the demand for meat decreased, the number of animals bred in the future would decrease, and animals would at least live in better conditions. Pigs, unlike plants, have central nervous systems and are able to feel pain and suffer. There's no need for panic or hysteria. People would have plenty of nutritious food to eat without breeding animals for food. As every environmental, humanitarian, and global welfare group has pointed out, we would actually have more land and other resources if we produced vegetarian foods. I urge you to reed The Food Revolution or check out E magaines EarthTalk statistics or Worldwatch for more details.
