Okay, this recipe came about because I had some leftover spinach in the fridge that I didn't want to waste. When you're on a very tight budget, or "broke", wasting anything becomes a serious crime. I was trying to come up with something tasty for breakfast.
Here's what I took:

The remainder of a package of baby spinach. I would estimate I had maybe 1 1/2 to 2 cups before I fried it up and it wilted.

1 small can of mushrooms, drained

1 - 2 garlic cloves, minced

We had exactly 3 eggs left. I took them and added a bit of milk to them so that there was more to it and stirred it up good with a fork. I would guess maybe 1/2 cup milk. I didn't measure; just poured it in.

What was left of a package of feta cheese. I would guess maybe 3/4 to 1 cup.

Sprinkles of salt and pepper to taste.

Some parmesan cheese. I would guess maybe 1/4 cup.

Some fresh parsley.
What I did:
I fried the first three ingredients up in about a tablespoon of olive oil until the spinach wilted and the garlic cloves were slightly tender. The mushrooms are already cooked so they just sort of absorbed the flavors of the other things and sauteed a little.
Next, I sprayed a baking dish with cooking spray and poured the spinach/mushroom/garlic mixture in, lining the bottom of the dish. I sprinkled some salt and pepper over this.
I took the egg/milk mixture and poured gently over the spinach mixture. I then sprinkled the feta cheese over the entire top along with the parmesan cheese.
Last I cut up a bit of the parsley and sprinkled on the top just to make it look pretty (lol).
I baked it uncovered in the oven at 350 degrees for about 25 minutes.
Voila!

This was served for breakfast with buttered toast.

Yummy, I will make this.
I frequently use leftover bits of fresh veggies (spinach, onion, peppers, broccol) the last bit of cheese) or bits of meat to make an omelet.
Creating with those leftovers bits can be an adventure!
I love "leftover" dishes. They sometimes make the best meals.
