I think this recipe sounds fantastic!

I would keep an eye on the cook time, however. I would not want this roast to be well done and dry. That ruins a good roast!

IF I were going to make this, I'd omit the cayanne pepper, but I'd let it cook longer than the one hour. I'd rather have it on the drier side than bloody and not cooked through well.

I was brought up on all meat being very well done; if not cremated. Both my parents liked it that way. That's how my taste developed. Eat you boots? How about if I just breath heavy and lick them, Miss Dominatrix?

Now you're talking, Rob. And my dad likes his meats WAY cooked, but I certainly didn't follow in those footsteps.
