I love the freshness of a sweet salsa, especially if you have home made chips!
MANGO AND TOMATO SALSA
It is not necessary to peel or seed the tomato. The salsa is
delicious with seafood, grilled pork or tortilla chips. Start to
finish: under 20 minutes. You can also add some jalepeno peppers, or your fav ingredients.
10 to 12 strips fresh peeled mango, finely chopped
1 cup finely chopped fresh tomato
1/4 cup finely chopped red onion
1 garlic clove, minced
2 tablespoons fresh chopped cilantro leaves
Juice of 2 limes
1/4 teaspoon crushed red pepper
Salt to taste (optional)
Combine all ingredients in a medium bowl, catching as much of the
juices from the mango and tomato as possible and mixing them in.
Serve immediately or cover tightly and refrigerate for up to a week.
Makes about 2 cups.

yummy!
I love Salsa. Thanks for posting to the cooks corner
Sounds great.
This sounds delightful (yes to jalepeno and to cilantro) Would you mind clarifying how many mangoes (aprox) is "10-12 strips" Thanks!
it's all relative but i would say 1-2 mangoes, since there's really not a lot of fruit on them.
Robyn F: Thanks for the clarification. I believe Arleen Hodge's remark references that I posted your delicious recipe on my Facebook page. I made it at dinner last night and it was wonderful on the side of some salty crusty chicken thighs. Next time I'm adding some black beans too, 'cause I'm just crazy that way.
