There is nothing more comforting than a homemade caramel and the satisfaction of one's self successful endeavors in the kitchen. I share this simple recipe with you all. With the cold days coming ahead, it's a great time to play in the warm kitchen.
Caramels.... Silky Melty Goodness
1 c. butter
1 lb. brown sugar
1 tsp. vanilla
1 c. light corn syrup dash of salt
1 (15 ounce) can sweetened condensed milk
***Make sure you use a candy thermometer with this recipe!***
Prepare a 9 x 9 x 2-inch baking dish by greasing the pan with butter - be generous with the butter, then you are sure your caramels will not stick! Set dish aside for quick access when the candy is ready to be poured. Melt butter in heavy 1 quart saucepan. Add brown sugar and salt, stirring until thoroughly combined. Blend in corn syrup. Gradually add sweetened condensed milk, stirring constantly. Cook and stir over medium heat until candy reaches firm ball stage (245 degrees), which will take about 12 to 15 minutes. Remove from heat, and stir in vanilla. Pour into buttered 9 x 9 x 2-inch baking dish. Cook thoroughly. Cut in small squares. Wrap each in clear plastic wrap or wax paper, if desired. Makes about 2 1/2 pounds of candy.
