For dinner tonight I cooked a 2 lb. chuck roast in the crock pot. The reason it was only 2 lbs. is because I cut it in half and made the other half into vegetable beef soup (see previous post).
I sliced an onion and put it in the bottom of the crockpot.
I put the roast on top of the onions.
I added about 1/2 cup of water.
Seasonings:
Garlic Salt
Rosemary
Salt and Pepper
Add seasonings to your taste and cook for about 3 hours on high. Then add whole carrots and about 1/2 cup of red wine. Cook about 3 hours more on low.
When everything was done, I poured about a tablespoon of olive oil in a saucepan on medium heat and stirred in about 2-3 tablespoons of flour. When this had mixed in good, I poured the liquid from the crock pot in and whisked it well until thickened. It makes a thin gravy. Add additional salt and pepper as needed.
I also made mashed potatoes, Le Sueur Peas and iced tea. My family loved it!
This is how it turned out.
