I just found this recipe in our small town newspaper and thought it sounded creative. And pretty delicious too! :)
Hearty Lasagna Soup
1 lb. ground beef 1 1/2 cups uncooked mafalda or corkscrew shaped pasta
1/4 cup chopped onion 1/4 cup grated Parmesan cheese
1 teaspoon minced garlic 1/4 cup Italian Seasoning
1/4 teaspoon dried parsley flakes
3 1/2 cups Swanson Beef broth
1 can diced tomatoes (14.5 oz.)
Cook beef, onion, garlic and parsley in 3 qt. saucepan over medium-high heat for 10 minutes or until beef is well browned, stirring often. Pour off fat.
Stir broth, tomatoes and Italian seasoning in saucepan and heat to a boil.
Stir pasta in saucepan. Reduce heat to medium. Cook 10 minutes or until pasta is tender. Stir in cheese. Serve with additional cheese, if desired.

we're supposed to get snowed in and I have all the ingredients here in the house for this!
I like to keep some soup warm in the crockpot so we can keep going back for more!
