5 lg cans Chunk Chicken Breast (Costco and BJ's have the larger cans that I use)
5 stalks Celery
1 med Onion
1 qt. jar "now here's one of the secrets" - Mama Lou's 14 day Sweet Pickles...
or, if you must,
any store bought sweet pickle you prefer.
1/2-1 tsp? "this is the only other secret..." Yellow Curry (I never measure this. Just taste as you go and stop when you like it!)
¾ - 1 cp Mayo
2 tbls Mustard
*1 lg. clove Fresh garlic crushed
Salt and pepper to taste
I have some variations but this is the basic recipe. It is very simple quick and very delicious! Just mix all of the ingredients and refrigerate until ready to serve. Sometimes I leave out the pickles and it's still delicious.
*I like using fresh garlic for above recipe but you could use garlic powder. Last weekend I just added some Morton's Natures Seasoning.
NOTE: I'll dig up the recipe for "Mama Lou's 14 day Sweet Pickles, very soon, for anyone interested.
This recipe makes approximately 2½ quarts of chicken salad.
