1 pkg of frozen, chopped spinach (thaw & squeeze)
1 small can of drained mushrooms
1/2 cup sliced green onions
1 cup sour cream
1/2 teaspoon Italian Seasoning (herbs)
S&P to taste
TOPPING:
1/2 cup shredded co-jack cheese
1/8 cup grated parmesan cheese
Mix first 6 ingrediants and place in greased cassarole, top with cheeses.
Bake @ 325* for 25-35 minutes.
I am making this tomorrow for part of our Christmas dinner. I bought fresh button mushrooms. I will saute those in a bit of butter or olive oil and use instead of canned mushrooms. This is also good with the cheeses stirred in and bread crumbs on top of the cassarole. Use your imagination!
