I always make this recipe after I have simmered the carcass and gotten that good broth and bits of meat off of it....this is a 1 pot meal
1 Med onion, chopped
2 T butter
1 small can of mushrooms
4 oz jar of pimentos, drained and diced
2 cans of chicken broth or the equivalent of the turkey broth
1 1/2 cups of water
S&P to taste
8 oz of spaghetti (break in 1/2)
2 T parmesan cheese
3/4 c milk
3 cups diced cooked turkey (or chicken)
Saute onion in butter. Add broth, water, S&P. Bring to a boil. Add Spaghetti and cook about 15-20 min. Then add rest of ingredients, heat and serve!
We are having this tonight with garlic bread.
