I love to make gifts in a jar for my friends and family for birthday and just when we go visit them. They also make great hostess gifts. I often have friends who are diabetic and they require a different kind of gift in a jar than I usually make for our family. I don't keep these on hand like I do the regular gift in a jar. I make these for church auctions and for friends who are not allowed the sugar. They make great Christmas or hostess gifts. I hope you enjoy them and can adapt them to your families needs or as gifts.
Sugar Free Oatmeal Raisin Cookies
1 1/2 cups rolled oats
1 1/2 cup flour
1 cup raisins
1 cup splenda
1/2 tsp. salt
2 tsp. baking powder
You'll need a 1 quart mason jar,wide mouth is easier to fill and
empty.
Mix flour with salt and baking powder. Fill bottom of the jar with
oatmeal, then flour, raisins and splenda on top. Pack down
ingredients after every addition.
Don't forget to Attach following tag to the jar:
Sugar Free Oatmeal Raisin Cookies
Preheat oven to 350 degrees F.
In a large bowl mix 2/3 cup melted butter, 4 egg whites, 1/2 cup skim milk and 1 tsp. vanilla. Add contents of jar and mix until well blended. Drop by teaspoonfuls onto greased cookie sheets, about 2 inches apart. Bake 12-15 minutes. Cool on sheets for 5 minutes then remove to racks to finish cooling.
