It's almost Thanksgiving! I...for one....enjoy the side dishes even more than the turkey. Don't get me wrong; I LOVE turkey. I just really enjoy the variety of the delicious side dishes even more.
The following is a side dish I've only made a few times, but it instantly became a family favorite.
Thanksgiving Cheesy Spinach Casserole
Ingredients:
1 small onion, finely chopped
6 eggs
1 tablespoon olive oil.....keep bottle handy!
1 cup dry white wine....you can keep this bottle handy, too!
1 cup milk
1 cup half & half (may use heavy cream if you prefer it to be richer)
1/4 teaspoon nutmeg
4 10-ounce boxes of frozen spinach, thawed and squeezed of excess water
2 cups grated cheese (I like something flavorful & sharp)
1/2 cup grated Romano cheese
1 cup seasoned bread crumbs
Cooking spray
Salt & Pepper
Instructions:
Preheat oven to 400. Coat a 3-quart baking dish or lasagna pan with olive oil.
Heat olive oil in large skillet. Add onion, salt & pepper ( a shake and a dash!) and wine. Cook on medium heat until most of the liquid has cooked in.
In a separate bowl mix eggs, milk, cream and nutmeg. Add spinach, cooked onion mixture, grated cheese and Romano. Pour into baking dish.
Sprinkle bread crumbs evenly over mixture and lightly spray with butter or olive oil flavored cooking spray.
Bake approximately 40-50 minutes or until bubbly and golden on top.

3 or 4 large sweet potatoes, peeled, sliced about 1/2 inch thick, set aside in bowl of water (stops oxidization and keeps potatoes a pretty orange.)
3 or 4 large apples, (do not peel) cored, sliced. Set aside in bowl and drizzled with lemon juice or 7 up to keep them white.
1 can unsweetened frozen orange juice or a 1 qt. container of unsweetened orange juice.
1 TBL. cinnamon
pan spray
9 x 13 inch baking pan
Aluminum foil
Preheat oven to 350 degrees. While oven is heating, place potatoes and apples in pan, 1 slice of potato, 1 slice of apple, stacking them like this ///////// until all are in place.
Prepare frozen orange juice as directed on can or use o.j. from carton. Drizzle juice over potatoes and apples, adding enough to make about 1/2 inch of liquid in bottom of pan.
Sprinkle cinnamon over all. Cover with foil and bake until potatoes and apples are soft. I like to bake them a bit longer so apple slices are a bit brown.
lol i forgot to telll my oldest not to mix pudding with milk and it was a little sloppy lol enjoy!and everyone have a great thanksgiveing
