I make this every Christmas. It is delicious and a slice or two looks very pretty on a plate of assorted cookies. It can also be served as a dessert and looks colorful on a party buffet.
Ingredients:
Cookie:
- 2/3 c. butter or margarine, softened
- ¾ c. sugar
- 1 tsp. Ground ginger
- ½ tsp. Baking soda
- ½ tsp. Ground cinnamon
- 1 egg
- 2 Tab. Mild-flavored molasses
- 1 ¾ c. All purpose flour
- 1 ¾ c. small or cut up large gumdrops
Glaze:
- 1 c. powdered sugar
- 1 Tab. Softened margarine
- 2 Tab. Milk
- 1/2 tsp. almond extract
Instructions:
Cookie:
Grease pizza pan
In a large mixing bowl, combine butter, sugar, ginger, cinnamon, baking soda and flour.
Mix with electric mixer until smooth and well blended.
Add egg and molasses
Spread in pan
Bake for 12 minutes at 350.
Remove pizza from oven.
Sprinkle on gumdrop pieces
Bake 8 minutes or until brown.
Allow cookie to cool completely before glazing.
Glaze:
With electric mixer, mix ingredients to a thin, drizzle consistency.
Pour glaze into a plastic zip baggie.
Cut off one corner of bag to make very tiny opening.
Squeeze the glaze through the hole in the bag, dribbling it over the cool pizza.
Using a pizza cutter, slice cookie pizza into narrow wedges.
