This site has some really wonderful, simple recipes for using up Thanksgiving leftovers. These recipes are for ham, turkey, or roast beef leftovers. They have a discussion board going on in the OAMC/Freezer/Make Ahead/Leftover Recipes Forum. Ratings and suggestions from cooks who have made the recipes are also posted.
Another all time favorite, Better Home & Gardens, has some unique recipes, including several Mexican entrees. Find recipes for turkey tortilla soup, cran-turkey enchiladas, cranberry-spinach salad, nacho-turkey casserole, smoked turkey panini, creamy turkey-vegetable soup, chef's salad, Cobb salad hoagies and much more.

Finally, here's an old favorite from Grandma's recipe box:
Holiday Leftover Turkey Stew
Put turkey carcass, neck & bones in large pot. Cover with cold water and simmer 2-3 hours. Remove all bones. Take off good meat and return to pot.
Add:
- Leftover turkey, stuffing & gravy
- Chicken bouillion cube
- 6 - 7 medium potatoes, diced
- 2 stalks celery, chopped
- 2 onions, chopped
- 5-6 sliced carrots
- Salt & pepper to taste
Heat until vegetables are done. If broth is thin, add 1½ Tab. Cornstarch to ¼ cup cold water, mix until dissolved and add to the stew. Stir well. Broth should thicken without lumps.
