I don't have a whole lot to say this morning so I will share a breakfast recipe. This recipe is nice for when you have company staying over. It makes for a nice herty breakfast.
Sausage and Potato Breakfast Casserole
1 pound breakfast sausage
2 tablespoons all purpose flour
1 ½ cups 2 % milk (only 2%)
1 pound package frozen, shredde hash brown potatoes
1 small red onion, finely chopped
1 ¼ grated Mexican shredded cheese
Preheat oven to 350. Spray cooking spray on a 8 x 8 inch glass baking dish. Cook sausage in a pan and break in to small pieces. Mix in flour and milk, cook until mixture boils and thickens. Stir occasionally. Arrange the potatoes in the baking dish patting them down flat like a crust. Sprinkle half of the onions and 1 cup of the cheese on top of them. Then pour the sausage mixture over top and spread it so it is flat sprinkle the remaining cheese and onion on the top.
For more color dice up some green peppers and sprinkle on top.
Bake for 45 minutes.
Serves 6 - Servings are generous
