In honor of Vegan MoFo III, a month of celebrating all things vegan, I thought I’d talk about my favorite Vegan cookbook – Veganomicon. Vegan veterans Moskowitz and Romero really outdid themselves with this tome. Unlike Vegan with a Vengeance, this book has a ton of recipes that will leave even carnivores wanting more.
All recipes are labeled to let you know if they are fast or consist only of easy to find ingredients, and most of the recipes fit these bills. They don’t rely on meat substitutes, and even have a host of menu suggestions for various celebrations. The introductions to the recipes are lighthearted, and they offer lots of suggestions on how to vary the recipes. Additionally, they provide some recipe basics as well. Take polenta: "Polenta has been called many things, each more insulting than the last: cornmeal mush, grits, porridge. But it got a new lease on life in the '90s when foodies started referring to it by its proper name and charging twenty dollars a plate for it." They follow with basic polenta-cooking instructions.
Even if you aren’t vegan, if you’re looking for a way to add some healthy food to your diet then I highly recommend this book! If you are vegan or vegetarian, you’ll make up for the cost of buying this book quickly when you’re saving lots of money by making your own burgers and such at home!

Last night I made Chickpea Cutlets and mushroom gravy. Both were easy to make, and tasted delicious! I didn’t change anything other than upping the quantities a bit so I could use an entire can of chickpeas. Serve with a vegetable side, and you have yourself a healthy meal.
