I love and adore my mom but honestly, she rarely cooked. When she would cook, she would make the same 3-4 dishes over and over again so I'm surprised I can even cook at all.
I owe any cooking skills I have to my Grandma who was a wonderful cook. Sadly my Grandma isn't here anymore but she passed on many dishes that I make today for my own family.
Wednesday nights were always special to me because I got to stay the night with her and did this up until she passed away when I was 19. Every Wednesday I'd come to her house after school, we'd go out to dinner, eat Rocky Road candy bars for dessert and then watch Doogie Howser before bed. I sure do miss my Grandma!!!
One of the best dishes she made was Potato Salad and she would always let me help her make it. My favorite part was when I could taste it to see if it 'needed anything else' added to it.
I am so happy she taught me how to make this dish because it gives me something yummy to take to outings and my kids love it so much that they ask me to make it at least once a week. This is definitely an old-fashioned recipe but I love it because it has so many eggs in it.
I hope you like Grandma's Potato Salad as much as we do!
Grandma's Potato Salad
Ingredients:
- 8 potatoes
- 5 eggs
- 1/2 cup finely chopped onion
- 1/2 cup mayo (or enough to make salad creamy)
- 1/2 cup sweet pickle relish
- 1-2 tablespoons mustard
- salt & pepper to taste
Directions:
- Cook potatoes -- Peel the potatoes and then cut into large bite size pieces and add them to a pot of boiling, lightly salted water. Gently boil the potatoes, uncovered, until they are tender but still firm (about 10 minutes) Drain the potatoes in a strainer and set aside to cool.
- Cook eggs -- Place the eggs in a saucepan and cover with cold water. Bring the water to a boil and continue to boil gently, uncovered, for about 10 minutes. Remove the eggs from the water to cool down. When the eggs are cool, peel & chop them up into small pieces.
- Create your salad -- Gently stir the potatoes & eggs together in a large bowl. Then add the finely chopped onions, mayo, relish & mustard. Add the salt & pepper and stir again making sure everything is mixed together well.
- Taste -- Make sure to taste your salad and if you feel it needs any additional relish, mayo, mustard, onion, salt or pepper then add those ingredients.
- Chill -- This potato salad is best if you are able to chill it overnight so the flavors can blend together but of course it's hard to wait that long to eat it. :o)

An awesome basic tater salad! Very similar to my grandma's too. I think she used miracle whip though.

I use 12 hard boiled eggs, sometimes more, celery, little vinagar about a cap full. use kraft salad dressing. like it better than any of the others. probably 1 1/2 pounds of potatoes, maybe two never weighted them. Other than that it is pretty much the same.. Like to have left overs..
My mother had a secret recipe for potato salad that no one else in her family could come close to making. She finally revealed the secret ... she put in as many eggs as potatos. Maybe even more. She admitted she was embarrassed to tell them how many eggs she used! LOL! My recipe is very different from yours. I should post it. (Mom's dead, she can't hunt me down and kill me for revealing her secrets.)

I think she was embarrassed because she used probably double what her original recipe called for. Remember she lived through the Depression and eggs were rationed. :)

Mine is just a little different. I dont like sweet pickles, so I use dill pickle relish and love pimentoes in it. Never did until I ate some my ex mother in law served some with them in it. Adds color and taste good too .
I am sure I would love yours too. Just leave out the sweet pickles.

My mom did a special homemade potato salad too. She's gone now, and even though we have the recipe, it's never quite the same as when Mom made it no matter who tries to duplicate it.
Isn't that so weird, Jerry? I hear this from lots of people - my husband's Grandma used to make this wonderful (from what I hear) dense chocolate cake and I love the one his mom makes but my hubby swears up and down that it's just not the same as when his Grandma made it. :o)

And I know what ya mean about the memories.....I recently went to the Farmer's market, and was getting a bushel of peas to shell myself. However they had some that were already shelled in the next bin. The smell wafted up, and it took me back to my childhood and the smells of fresh peas being shared on my Nanny's front porch. I just went to crying like a baby.........and everyone just stared as if I had lost my mind! Josh wouldn't even stand next to me! lol
