I scramble 2 eggs in olive oil. Next I add a cup of cooked rice (any variety but I usually use brown - cook rice separately to package directions and add to eggs after eggs are cooked) Then I add some soy sauce to the mix - mixing it all together good and letting it cook a few more minutes. It is my own version of "fried" rice LOL. SOMETIMES i will eat it in a burrito if I am on the go.
