I just love egg salad sandwiches! I really wanted to serve this on toasted spicy cheese bread, but I forget we finished that last Sunday for breakfast. I had some croissants in the freezer that worked almost as well.
And yes, Virginia, that DOES say ketchup. It balances out the tartness.
To make the perfect boiled eggs, see my recipe here:
4 hard boiled eggs, peeled and chopped
mayo
shredded mild cheddar cheese
sliced celery
diced pimento (I used jarred)
squirt of fresh lemon juice and hot sauce
squirt of ketchup
salt and pepper to taste
In a bowl with a tight fitting cover, mix eggs and the remaining ingredients. Taste and adjust as you like.
Cover and refrigerate for a while to meld flavors.
I served a scoop on a croissant, but I think a thick slab of toasted homemade bread would've been even better.
Variations: Add minced red onion. Add cayenne pepper.
