I bought groceries last week and stocked up on chorizo. Since I had already had chorizo soup this week it was time for something a little different. I had leftover chili cheese bread to use up so this is what I came up with.
Measurements are approximate.
14 oz Chorizo sausage; casing removed
½ green pepper, chopped
1 small onion, chopped
3 cloves garlic, minced
2 cups half and half or milk
4 eggs
½ cup chopped fresh cilantro
1 t ground cumin (optional)
½ t salt and ¼ t black pepper or to taste
6 thick slices stale bread; crust removed and torn in to pieces
1 ¾ cup shredded cheese (I used Mexican blend)
Preheat oven to 400°. Spray 8" square baking dish with cooking spray. Set aside.
Saute chorizo in large frying pan over medium til it starts to brown nicely. Add green pepper and onion. Cook about five minutes til onion softens. Add garlic and cook about another minute. Remove from heat and cool.
Whisk milk, eggs, cilantro, cumin and salt in pepper in a large bowl to blend. Place bread pieces in bottom of prepared dish. Add chorizo mixture to egg mixture. Pour mixture over the top of the bread. Let sit for about 10 minutes. Bake strata about 20 minutes. Top with cheese and bake 10 minutes more. Let stand 5 minutes before serving.
I served this with salsa and sour cream.
