Mom brought homemade chorizo links, ham and deli American cheese and this is what we whipped up.
6 thick slices stale bread (I used a small loaf of wheat), broken into small pieces
6 eggs
1 1/2 cups half and half
1 t mustard powder
freshly ground black pepper to taste
2 cups (8 oz) grated deli American cheese
1 cup (4 oz) diced or ham
1 large chorizo sausage link, diced, fried crisp and drained well
Spray a 13x9" baking pan with cooking spray. Sprinkle bread in pan, pressing to cover pan bottom completely; add more bread as needed. Set aside.
In a large bowl, whisk together eggs, half and half and seasonings. Stir in cheese and meats. Carefully pour over the top of the bread. Cover tightly with foil and refrigerate overnight.

Preheat oven to 350°. Bake strata 1 hour. Remove foil and bake til set, about 10 minutes or so. Cool 10 minutes before slicing.

I served mine with an additional slice of cheese.
Variations: Add tomato, your favorite cheese, onion, green pepper.
