Here's a great way to eat an inexpensive meal AND use up leftover baked potatoes! (My family always makes more than we eat, so using them the next day is so helpful)
Slice or cube potatoes. Fry in large skillet, with butter or oil. When potatoes are almost crisply fried, crack several eggs directly on top. Cook for a couple of minutes, then stir. Continue to cook, stirring every couple of minutes, until eggs are cooked. Add more oil or butter as needed. Season with salt and pepper.
You can also add some cheese, onions, or chopped veggies, to make it like an omelet meal. Great for any meal of the day!
