Incredible Egg Recipe

 

One Eyed Jack

 

This is a recipe that my Dad taught me when I was a young girl. It is a very simple recipe in that all that it requires  is one egg and one piece of bread per serving.

The first thing you do is cut a circle in the middle of the bread. You can use a cookie cutter to do this or your hands. Butter the bread and drop it into a warm frying pan. Next crack open a egg in drop it into the circle of the bread. Fry to the consitancy that you like. Flip the bread egg over, cook until done.  Place on a plate and enjoy.

I cook these a lot when we go camping. I usually tell a scary story about a man named one eyed Jack first, then I make and serve one eyed Jacks.

I never knew what this was called - I love it. I see someone called it 'toad in the hole' - I've heard that term but never knew what it was....guess I'm sheltered, or should be - hahahaha

Yup, my dad made this and called it a Bulls-eye egg. If you ever watched the Movie Moonstruck, in the opening scenes, Cher's movie mother is making one. I get nostalgicaly hungry every time I see that bit.
I remeber these =) My aunt used to use this tactic to get me to eat eggs as a young girl ;)

Also called "gashouse eggs" which derived from German "guesthouse eggs." Featured in the 40's movie Moon over Miami, and also the more recent film V for Vendetta.
