These brownies aren't just moist and filled with goodness they are so easy even the kids can make them! What a better made memory during the oncoming rush of the holiday season than another reason to spend some quailty time with the kds?
Oh, how I love this time of year! I want to get out those cute little leaf shaped iron muffin tins and get to baking! Apples are everywhere, pumpkins are sitting pretty in the patch and holiday recipes are popping up all over!
Here are some simple ones that you can make with your kids:
Pumpkin Brownies
1 box Duncan Hines Brownie Mix (MUST be Duncan Hines)
the other ones taste funny with this recipe.
1 large can of Pumpkin puree
Mix the brownie mix with the puree. (NO eggs, water, etc. Just the two!)
Mix the two ingredients until you get a brownie mix consistency.
Bake at the temperature on the box until "muffins" are finished.
Quick and easy!

Pumpkin Muffins
2 eggs, beaten
1 cup sugar
1 cup canned pumpkin
3/4 cup olive oil
1/4 cup water
1 2/3 cup flour
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 cup nuts, chopped (optional)
1. Preheat oven to 350.
2. Combine eggs, sugar, pumpkin, oil, and water in a medium-sized mixing bowl.
3. Stir together flour, baking soda, salt, baking powder, and spices in a separate bowl.
4. Add dry ingredients to wet, and stir to blend.
5. Place batter 3/4 to top of non-stick or lightly oiled muffin tins. You may also use cupcake cups.
6. Bake 20 minutes or until toothpick inserted into the middle of a muffin comes out clean. Remove from pan right away. Makes 9 muffins.
