I was looking at Sara Foster's Casual Cooking the other day and saw a "recipe" for Fried Egg with Fresh Herbs and Salsa Quesadilla. I was looking for something different to make for breakfast. I thought I would try this.
I used 8 Grain Tortillas that I found at one of the local stores. More fiber than a normal whole wheat tortilla. The only thing that was fattening in the dish is the egg. A couple of eggs a week is actually good for you.
I fried an egg in 1 tsp of vegetable oil. I heated the tortillas in a nonstick skillet brushed with 1 tsp of oil and I used 2 tbsp of cheese all together.
This is what I did:
I heated 2 of the multi grain tortillas in a nonstick skillet. I set them aside in tin foil.
I "fried" the egg in 1 tsp of oil in the same skillet. I topped one of the tortillas with a bit of the cheese, then a bit of homemade salsa, some fresh chile, some cilantro, and then the egg. I topped it with the remaining cheese and the other tortilla. I "fried" the quesadilla in the skillet, browned it on both sides and served it with a bit of reduced fat sour cream and a bit of chipotle chile.
It was outrageously delicious.
I will definitely make this again. Soooo good.
