When I started working from home it became necessary to come up with quick and healthy lunches that both my 2-year old and I would enjoy. I did not want to become reliant on packaged lunches such as macaroni & cheese and honestly I wanted my daughter to be more adventurous in her eating.
I realized that it's quite easy to have some prepared foods that aren't boxed or pre-packaged ready for easy lunches. When I make chicken for dinner I will cook an extra breast, then chop it up and store it in the refrigerator. I also chop up vegetables, both raw and cooked (leftovers) for refrigerator storage. I love making quick salsas from things like tomatoes, corn, black beans, onions, lime juice and cilantro. These salsas play multi-duty as dips, salad toppings, or wrap fillings. My daughter likes eating her foods as finger foods, so all these ingredients play double duty. She can eat hers plain while I create something more exciting for myself - happy daughter and happy mom!
Some items I usually have on hand to mix and match into easy lunches:
Tortillas or whole wheat bread
cheese
chicken (or any protein)
eggs (you can add most of these ingredients into scrambled eggs)
homemade salsa
canned beans
fresh spinach
chopped veggies - broccoli, tomatoes, onions, avocado (chop at the last minute).
veggie burgers
I can turn these ingredients into a myriad of different lunches - wraps, sandwiches, salads. From a scrambled egg and salsa wrap to a black bean, chicken, and cheese quesadilla there are so many combinations that the possibilities are almost endless.
