As a vegetarian for 32 years, I will attest this can be done healthily. I do know others who have experienced some severe nutrient depreviation -- like non-veg's who don't balance their diets.
I remember a while ago where a SGT was discharged from the army for being overweight -- he was a champion weightlifter, and his body fat was under 3%.
As long as insurance is an industry of numbers, I fear this good idea will not be possible.
