I first found this recipe when I was working out a lot with my husband.
I wanted something healthy and tasty, because lets face it if it doesn't taste good we aren't going to eat it.
I got my husband the Men's Health magazine and soon realized that Men's Health was much better (in my opinion) than the women's health and fitness books, the same moves a man does a woman can do.
To make this long story short I started reading his magazines and they post some really great recipes, this is one of them.
I hope you give it a try and you like it as much as we do.
Servings:
6 people
INGREDIENTS
Ingredients
- 1 Tbsp olive oil
- 1 small onion, sliced
- 1 lb ground turkey breast
- 1 lb ground pork
- 1 can diced tomatoes with jalapeño peppers
- 1 can (10 1/2 oz) each chickpeas, black beans, and kidney beans
(drained or not - your preference)
- 1 can (14 oz) low-sodium chicken broth
- 1/4 tsp each salt and cumin
Preparation
In a pot, heat the oil on medium-low. Add the onion and sauté until soft (about 3 to 5 minutes). Add the turkey, and brown for about 5 minutes. Add the tomatoes with juice, chickpeas, beans, broth, and spices. Stir and bring to a boil, then reduce the heat and simmer for 20 minutes. (Freeze the leftovers and save $5 by eating them for lunch.)
