This was tonight's dinner. I used Barilla Thin Linguine (we love Barilla! Go through 3 boxes a week!). This was just delicious. If you can't buy Shrimp Scampi Sauce Mix (I think I bought it as it was being discontinued), omit it. This was just delicious. Make sure to season correctly. It can be a bit bland without salt and pepper.

Linguini Fine with Shrimp Scampi in Aglio e Olio

1 lb Barilla Thin Linguine
14 large shrimp
4 glugs extra-virgin olive oil
4 cloves garlic -- thinly sliced
1/4 cup Shrimp Scampi Sauce Mix*
1 cup water
drizzle unfiltered extra virgin olive oil
salt and pepper
Boil a bit pot of water; add pasta and cook until done - 6 minutes on the package!
While the pasta cooks, heat oil in a skillet. Add garlic. Saute until browned; set garlic aside until later. Add shrimp and cook them in the garlic oil; about 2 minutes per side. Remove once cooked (pink and curled - no longer grey).
In a small pot, heat up the Shrimp Scampi Sauce Mix with water until boiling.
Drain pasta. Add to skillet and mix well with garlic oil, shrimp, reserved garlic and a ladle or 2 of the shrimp scampi sauce.
Serve, drizzled with unfiltered extra virgin olive oil.**

NOTES : Risa's notes:
* Shrimp Scampi Sauce Mix comes in a can from GSC Gourmet. If you can't find it, then omit it.
** I use unfiltered olive oil because it has so much flavor. If you can't find it, or don't have any, use regular extra-virgin olive oil. It is an extra added flavor that can't be beat!
