Serves: 4
Orange and grapefruit add flavor and vitamin C to this fiber-rich bean salad.
INGREDIENTS
1 grapefruit, peeled and sectioned
2 oranges, peeled and sectioned
1 (16 oz.) can of black beans, drained and rinsed
1/2 cup red onion, chopped
1/2 avocado, sliced
2 tablespoons lemon juice
Black pepper to taste
DIRECTIONS
1. Combine all ingredients.
2. Serve at room temperature.

This sounds good. I've never eaten avocado before. I'm going to bookmark this so I can make it. I'm on Weight Watchers, and I think this would fit in perfect with my eating plan.
