Curried Egg Salad Sandwiches
Ingredients:
1 dozen hard-boiled eggs
¾ cup Mayonnaise
2 Tbsp. Mango Chutney
Curry Powder to taste (about 1-2 tsps.)
Method:
Mix eggs, mayonnaise, chutney and curry powder. Mix well. Spread onto bread. You may also serve on wheat, white, sourdough, croissant, or rye. We served these sandwiches with side salad or fresh fruits and liked to cut the bread out in shapes for the holidays

I left out a little step - chop the eggs. I used an egg slicer and put the egg in one way and then shifted it around to face the other direction in the slicer so the eggs came out in nice little diced pieces.
I LOVE the curry and mango combination for luncheons with friends or for tea parties ... I hope you will enjoy!
Nah, don't chop the eggs. Just mix them -- whole -- (heh) and serve 'em up that way!

Nice - the only thing I would change is I would use duck eggs whenever possible. I know that sounds weird, but I have a duck egg source - and they make the creamiest, richest tasting salads.
I've never tried duck eggs - I'll have to start looking for them Richard, thanks!
Great idea, Jan - Praj has been sharing some wonderful recipes as well. One of my resolutions is to 'get out of my cooking comfort zone' this year, so this recipe will come in handy.
