Our first friends here in South Carolina were our first neighbors. We used to get together to watch football and have supper and spend time together. One of the first meals they shared with us was Red Chicken Stew. My husband and I really liked it, but we could never get them to share the recipe. I've always wanted to duplicate that recipe and finally discovered a recipe here, which is said by the person who posted it to come from the Pavilion Restaurant in Edisto Beach, South Carolina. It's not exactly like the Red Chicken Stew our friends fixed for us as I recall it, but it was very good in its own right. If you do not like spicy food then this recipe is NOT for you. It was very spicy, too spicy for my kids, and nearly too spicy for my husband, but I loved it, since I love spicy foods!
Red Chicken Stew
Ingredients:
- 1 large chicken
- 5 cups water
- salt
- 4 strips bacon, sliced
- 3 cups chicken broth
- 1/2 bottle Worcestershire sauce
- 1 (32 ounce) bottle ketchup
- 1 Tbsp. black pepper
- 1 tsp. cayenne pepper
- 1/2 cup flour, mixed with water
- 6 sliced hard-boiled eggs
- 1/2 cup butter
- hot sauce (optional)
Directions:
- Cover chicken with water in a large stockpot and salt to taste. Bring to a boil and then simmer til tender.
- Drain but save the broth (you will use it later for the 3 cups broth) and set the chicken aside.
- Saute bacon until almost crispy (in the same stockpot). Add onion and saute until soft.
- Add 3 cups broth (from the stock), worcestershire, ketchup, seasonings, and chicken. Bring to a boil and thicken with the flour/water mixture. Stir in butter and eggs just before serving.
- Serve over fluffy white rice with a salad and some hushpuppies.
- Hot sauce can be added at this point on top of your chicken and sauce to make it even spicier. Yum!
***MY NOTES: I halfed this recipe and used chicken drumsticks and leg quarters. The original recipe did not say when to add the eggs so I added them in at the end (as shown in the directions above) when I added the butter. We served it with a side salad but not the hushpuppies.

I would probably used pureed canned tomatoes in place of the ketchup. But other than that, look out!
