The cheapest meat to fix in today's economy is, of course, chicken. However, one gets tired of having chicken week after week. Luckily there are thousands of ways to jazz it up and make it something beyond the ordinary. I'm sure I'll end up sharing many chicken recipes with you in my "Eating While Broke" series.
For today's meal, we had Bourbon Chicken. I wanted something to throw together in the crock pot, because I've been very busy with things this week and didn't want to spend a lot of time fixing an evening meal. I found a recipe for Bourbon Chicken HERE. I had everything needed to make it, and I figured it would fix just as well in a crock pot as having me laboring over the stove, so I threw it all together and voila! Supper!
This went over very well with the family, including the kids (5 and 4) who are not so easy to please. Of course it smelled great while cooking, giving the house a slight Chinese restaurant smell, which made my mouth water the entire day. I was afraid it would be too spicy for my kids, especially my daughter who does not tolerate spicy foods well; however, it was a big hit. It was served with white rice and an organic spring salad mix.
Bourbon Chicken
Ingredients:
- 2 lbs boneless chicken breasts, cut into bite-size pieces **
- 1-2 tablespoon olive oil
- 1 garlic clove, crushed
- 1/4 teaspoon ginger
- 3/4 teaspoon crushed red pepper flakes
- 1/4 cup apple juice
- 1/3 cup light brown sugar
- 2 tablespoons ketchup
- 1 tablespoon cider vinegar
- 1/2 cup water
- 1/3 cup soy sauce
** Note: I used chicken leg quarters instead, which I surmised was probably about the 2 lb weight. They were whole, not cut up.
Crock Pot Directions:
- I sprayed my crock pot with cooking spray and then put the chicken leg quarters in it, meat side down.
- In a medium size bowl I mixed all other ingredients (spices and liquids) until the brown sugar had dissolved.
- I then poured this over the chicken, set my crock pot on low, and let it cook the entire day, probably about 7 hours.
Don't want to fix the Bourbon chicken in a crock pot?No problem! Follow these directions:
Stovetop Directions:
- Heat oil in a large skillet.
- Add chicken pieces and cook until lightly browned.
- Remove chicken.
- Add remaining ingredients, heating over medium Heat until well mixed and dissolved.
- Add chicken and bring to a hard boil.
- Reduce heat and simmer for 20 minutes.
- Serve over hot rice and ENJOY

I think the soy sauce substitutes for the bourbon.

I love bourbon chicken but have never made it at home. Will definitely have to give it a try!
