This recipe sounds quite yummy (and unusual) but the title isn't quite accurate. When I think of a salsa, I think of fruits, beans, chiles, acid, etc. tossed together. This is more like a stew.
My version: get rid of the cornmeal and beer altogether. Make a nice marinade from lime juice, peach juice, fresh garlic and some cilantro. Grill the tenderloin whole. Serve it sliced with salsa.
For a salsa: Toss whole can of drained beans with chopped peaches, some garlic, cilantro and lime juice.
I think this would be tastier and a heck of a lot healthier.
