This recipe sounds fantastic! My only changes would be to the cooking method:
I would probably pan fry the chicken til nice and brown, bake for a shorter length of time and if need be, broil the bacon to crisp it up. Baking for 45-60 minutes just seems too long to me, and I would certainly not want dry chicken!
