A Recipe a Day- Chicken with Grape Tomatoes and Fried Basil

I am not sure why anyone would bother with the fried basil, I would toss it in near the end of the cook time.

Other than that, the recipe sounds decent, but I would serve it over pasta rather than rice, with a nice garnish of Italian cheese such as Parmesan or Asiago.

I could almost go for this...with a couple slight changes. I could take it over pasta with the cheese or rice...doesn't matter to me which one. I'd use boneless chicken breasts and cherry tomatoes instead of grape...less sweet and more tomato flavor. I might even get some chickie breastesses out of the freezer to thaw for tonight...if I can remember to later.

Sounds good... I would probably use whole grain pasta or brown rice, though. As for the basil... I LOVE it deep fried in olive oil... it's a whole other thing than just throwing it into the mix, in my opinion. However... I probably wouldn't actually do it myself. I'd eat it if someone else made it though. Just not into deep-frying.
