This pizza rocks! Hubby and I both loved it. We doubled the recipe and made two pizzas. Finished off one and a piece of the second yesterday, and I'm having some for lunch today. It was spicy enough to satisfy me (could have been spicier still) and yet not too spicy for hubby, who doesn't do spicy. I was actually surprised that hubby enjoyed it so much. He especially liked the taste the crumbled bleu cheese gave the pizza. We didn't serve the pizza with cucumber slices (wish we had, because I'll bet it went well together), but we did add some additional bleu cheese. Shannon also said you could use bleu cheese dressing in place of the bleu cheese/sour cream/mayo part to shorten prep time. Just add a bit of parmesan or Italian cheese, she said, to thicken it up a bit. We decided to just follow the recipe directly (although we did mess up and forgot that we were doubling the recipe and thus our pizzas had 2 less chicken breasts than they should have - hehe). Overall two thumbs up, and we would definitely recommend this one. I imagine we will be making it again in the future - hubby really did love it! Thanks again, Shannon, for another meal idea!! ; )
Buffalo Chicken Pizza

2 boneless, skinless chicken breasts, diced

1/4 cup hot sauce

1 t garlic powder

2 T butter
Buffalo Sauce (recipe follows)

1 frozen pizza dough, thawed (or your favorite variety)

1/4 cup mayo

1/4 cup crumbled bleu cheese plus extra for serving

2 T sour cream

1 1/2 cups (6 oz) shredded Italian blend cheese, divided
Buffalo Sauce

1 T butter

1/4 cup tomato juice or puree

2 T hot sauce

1/2 t garlic powder

Marinate chicken in hot sauce and garlic powder for 2-4 hours. Drain well.
In a frying pan, melt butter over medium high heat. Pan fry chicken til cooked through. Set aside to cool. Remove from pan with a slotted spoon.

Meanwhile, start sauce. Add butter to a small saucepan. When melted, stir in remaing ingredients and simmer til thickened. Set aside to cool.

Preheat oven to 450°. With oiled hands, spread pizza dough onto a pizza stone or your favorite pan. Set aside.

In a small bowl combine mayo, bleu cheese, sour cream and 1/2 cup Italian cheese. Spread over crust; top with chicken, drizzle with sauce and sprinkle with remaining cheese.
Bake 12-15 minutes or til crust is golden brown and crispy.
Serve slices garnished with additional bleu cheese and sliced cucumber, if desired.
