I have never cared for the texture of cube steaks, so this recipe just doesn't appeal as written. I would use it for chicken breast, however.
I would also bake the sauce with the chicken (or beef if you use it), rather than just pouring it on after baking.

Nope, not a fan of cube steaks either. But you never know. With the right recipe, anything is possible!
I think I've eaten them a couple times, and said "Never again".
And now that you mention it, chicken fried cube steaks would probably be edible.
Or as dad would say "Hash ap".
