Of course, I would marinate mine much longer and I would definitely add some fresh lime juice. I have also never seen boneless chicken breast with the skin still on.

Sounds pretty good to me!
We used to be able to get boneless breasts with the skin still on. Back when they first started selling boneless breasts in all the grocery stores. And then came Chicken McNuggets. They figured out that they could take the chicken skins and grind them up with the fat and all the little pieces parts of the chicken, press them into little patties and market them to children. I haven't seen a boneless breast with the skin on since.
I have however deboned my own when I really wanted the skin and/or the bone in ones were on sale really cheap. they're super easy to debone and worth the effort if you want the skin.
I don't think I've ever actually deboned one. I need better knives if I try that one at home.
