A Recipe a Day- Bacon Chicken

Bacon? Yes! Chicken? Yes! Barbecue Sauce? Maybe.

I would like to try this one, but I would make some changes for more flavor. I would top with the bbq sauce first, then a layer of thinly sliced onion, then top with bacon. Bake as recommended but broil the last few minutes to crisp up the bacon. If there is one thing I hate, it's wimpy bacon!

I think this would also be yummy (and messy!) served atop a good bun with a scoop of your favorite coleslaw.

It should be illegal to use barbeque sauce if you're not going to barbeque the chicken out on the grill. But I'll shut my mouth and eat it anyway. You know one thing I've noticed. Back home, you could get a chicken barbeque somewhere every weekend. I haven't seen one since I've been in the city. You have to go to a restaurant like The Dinosaur Barbeque or Nick Tahoe's if you want chicken from a grill. They do their own right outside the places.

Shannon, can I bake 2 sweet potatoes whole in the crock pot? I don't have any inserts for the crock pot.

Hmmm... not sure why you would do that, Lynn. Poke a few holes in them and use the microwave. The slow cooker just seems inefficient for just two sweet potatoes.

Oops. Forgot about the microwave. I was thinking about how not to heat up the kitchen. 90* days already sort of makes me think of alternative cooking methods that won't produce heat like the oven. We never microwaved sweet potatoes before. Guess it would work the same as regular. Hmmm.
