I changed the recipe quite a bit. Instead of baking the chicken and mushrooms, I pan fried them in a little olive oil. The chicken and mushrooms were removed, and I added 1/2 cup or so of white wine, fresh lemon juice and a dollop of heavy cream to deglaze the pan and make a great pan sauce as well.

I didn't add any parmesan cheese to the bread crumbs, as 1/2 cup seemed like an awful lot for very little flavor gain. Instead I served fresh grated Italian blend cheese over the top of the finished dish.
I served the chicken over pasta alongside Artichoke Focaccia. The foccacia was simply artichokes coarse chopped and mixed with bread crumbs, fresh garlic, sea salt and a little Italian blend cheese. I baked it til the cheese was melted, added additional cheese on top and broiled it for about a minute.
So simple and very tasty!

I've really not eaten many artichokes. Your foccocia sounds really good. Just may have to try this.
